Ichijuusansai 一汁三菜

Ichijuusansai means one soup three dishes, and it's something that can be served for breakfast, lunch or dinner. Earlier, we covered the different types of Japanese cuisine from elevated (kaiseki) to special occasion such as New Years (osechi), worthy of inclusion in UNESCO's representative list of Intangible Cultural Heritage of Humanity

For daily consumption, we'll explore in this course teishoku before diving into the bento. Teishoku is the food stuff of everyday convenience. Served in homes to inexpensive dining halls to restaurants and schools, it's the bread and butter, so to speak of Japanese cuisine. 

While consuming local, fresh naturally sourced ingredients is still an aspiration here practically speaking, more convenient pre-made options may be introduced into the mix. Here, it's Costco. There, the office worker and busy mom might be popping into a food hall basement of the depaato, or department store for deli-like items or even the combini, or convenience store. Either way, the composition remains the same following the principles of ichijuusansai.

和食: Rice as Foundation

The character, shoku, of washoku means eat or food. It's a pictogram of a bowl of rice that rests on a stand with a lid on it. Rice, or gohan, is the foundation of Japanese cuisine. Gohan is also another word for mealRice is thus always a given, like bread, and is thus not part of the three dishes.

  • Soup or shiru is often by default miso soup.

  • The three dishes, or okazu, would be a main dish and two side dishes of fish or meat, tofu, and vegetables. These three dishes are further broken down into three types for the the most traditional of dishes: namasu, nimono, and yakimono.

    • namasu – a dish of raw fish or vegetables immersed in vinegar​

    • nimono – food that's boiled or stewed

    • yakimono – flame-broiled or grilled food

These different techniques reflect the principle of employing different ways of preparing food to offer variety and satiate the palette by appealing to the different senses through textures and flavors. Along nutritional lines, ichi juu san sai is a system of composing dishes to ensure healthy digestion combining protein, plants, and starches; hydrating soup and low sodium dashi kombu and the ubiquitous rice.

Reflection on Audio

How this fits in my minicourse

This audio would really need some accompanying images or even a slide show to make it more engaging. The interview format with a subject matter expert would have been the best for this. I would have interviewed my mom and it would be a lot more engaging to hear her perspective on ichijuusansai and how she uses it to plan her meals. Ichijuusansai is a pivotal topic I think that demands more visual info. But here are the Module Learning Objectives it fulfills.

 

How the learner will interact with this audio

I was taken aback by how Captivate was similar to PowerPoint, as I used to design in PowerPoint for corporate presentations. I did Adobe Captivate Classic instead of the current version due the fact that the the most immediate and comprehensive source, LearnIt showed demos using the older version. Also, I'm more used to drop down menus and access being above the surface rather than hidden and already streamlined, like the current version appears to be. I chose it because it had some compatibility with Kajabi, which has been lauded as a good tool for small business owners. I am interested in possibly creating a business around lifelong learning, a passion of mine. I may want to try Articulate in the future as that's another major course authoring application to master.

The Audacity Experience

Kyle Stedman is by far the best YouTube instructor I've had so far with DIY learning an application. He's energetic, gets to the point, and is a great role model for online learning videos! Audacity was really easy to learn and I only needed to employ the basic options that he included in his video.
