Course Learning Outcomes (CLOs)

  1. Create and practice consumption rituals of breakfast and daily bento following 5 key principles of washoku (traditional Japanese cuisine).

  2. Execute all of the basic food preparation techniques employed in daily washoku to enhance the flavor and presentation of nutrient-rich plants, starch, proteins (number of techniques will be pared down).

  3. Employ key washoku ingredients for flavor and nutritional balance.

  4. Use creativity and resourcefulness (include substitutions) to adapt washoku practices in creating our own balanced daily breakfast and bento.

  1. Explain Japanese nutritional philosophy and how it's applied in food composition, choice of ingredients, food preparation, and consumption rituals. (Aligns to CLO1)

  2. Evaluate 5 principles of washoku for their own daily culinary and dining practices. (Aligns to CLO1) 
    Apply the ichi juu san structure in meal planning a breakfast or lunch, employing namasu, nimono, and yakimono. (Aligns to CLO2)

  3. Employ washoku techniques in sourcing color diverse local ingredients and composing a nutritionally and visually balanced meal. (Aligns to CLO4) 

  4. Identify and source 5 or more accessible washoku ingredients. (Aligns with CLO3)

  5. Plan 3-5 ways bento to maximize umami factor for a washoku-inspired breakfast or lunch. (Aligns to CLO3)

Reflection

This storyboard maps out my entire Module 1 titled Introduction to Washoku & Bento. It incorporates the welcome message talking head video and Module 1 screencast of the Five Principles of Washoku. Since it's at the very beginning of the course, it has the most foundational content which includes the philosophical underpinnings as well as an overview of Japanese cuisine. Because of this, it is the most extensive and intensive of the modules.

Storyboarding Process

I think this storyboarding process was very important in mapping out my module content, which I was developing as I went and thus kept it very rough. Though I looked around at the templates, I ultimately decided to customize mine from scratch, so that this storyboard is also the development of a template which I will refine. 

 

I really didn't want to fiddle with the various storyboarding programs or tools available because I felt it would detract from the development of actual content, which I needed to keep progressing. I also didn't want to be discouraged from using this useful process and employed my hands, since I'm a kinesthetic learner, as I'm already using tools like Adobe Premiere Pro and After Effects, which have their own learning curves.

My future template will be a cleaner version of the above, which I will print out and fill out by hand.
